Recipeasy- Parmesan Zucchini Quiche

Quiche is a personal favorite of mine. One quiche will feed me for days- breakfast, lunch, and sometimes late evening snack, especially since I have a less than-quiche-adoring husband, and can generally get him to eat it (and love it!) once before he is done for a while.

This quick combines some yummy cheeses, spices, and zucchini!

Ingredients:
Pre-made crust (pillsbury is delish!)
1/2 zucchini, Julienned
1 cup shredded cheese
6 eggs
1/2 cup milk
salt, pepper, garlic powder and oregano to taste
dried onion flakes
parmesan cheese for the top


 First, chop the zucchini and add it to the pre-made pie crust, in a round pie dish. Add the cheese and set aside.


Next, break 6 eggs into a bowl, add 1/2 cup milk and whisk until blended. Add spices to taste, and mix again before pouring it over your cheese and zucchini.


Then, top the mixture with parmesan cheese and salt, folding the extra edges over the filling for a rustic appearance.

Bake at 350 degree foes 35-50 minutes (sometimes mine take a looooong time!) let cool slightly before serving! :)

A Happy Day...Cobbler Recipeasy

I don't normally have really bad days, but a few day this last week have seemed brutal. I had so many exams to finish, have been struggling with a fever, and have been anxious to see family... I've been feeling restless!

We had our 18 week appointment yesterday afternoon, and the baby's heartbeat sounded so strong! My sister Lizzie and my favorite little boys sent me flowers for my first mothers day, and they are so beautiful!


After dinner, I made a delicious homemade cobbler (which I accidentally had to bake twice, since the crust didn't get quiiiite done the first time around) and we enjoyed it while we caught up on our DVR. It was such a simple day, and my very last exam was turned in by noon. I am officially, officially done with this degree and ready to move onto the next!




Today, I wanted to spend the morning relaxing and reading a good book (of my own choosing!), but I got started cleaning and just couldn't stop! Our house hasn't looked so good since... well since January, right before my classes started and my pregnancy symptoms kicked in!

Nursery DIY- Changing Table

I was looking everywhere for a changing table/dresser combo that I liked. I finally found one on Target.com (surprise, surprise, right?) but it was over $300, and since it had very little storage, and we have a pretty tight budget for the nursery, I just didn't want to spend that much... 

I started keeping an eye out on craigslist, checking every day and I found the exact changing table I had wanted- except it was dark brown and not white, and it was pretty banged up. But still- for a $40 price tag, I couldn't pass it up!

AFTER! :) I didn't notice until it was white that some of the drawers sit a little crooked-- but I don't think the baby will mind, do you?

Dresser- $40

Total cost= $72, a Savings over the "new" dresser (with plain knobs, to boot) of $228


Nursery Decor- Enchanted Woodland

I've been daydreaming about this little baby's gender neutral and oh-so-cute nursery since the day I found out I was pregnant. Luckily for me, I have a lot of little owls and elves sitting around that will be perfect for the nursery.

We did our first real nursery project last night, and painted the changing table/dresser combo that I had been dying to buy, but had a $300 price tag. I found the exact one on craigslist for $40- but it was in a dark wood tone, so we painted in white (DIY post to come). This weekend, we're getting the crib put together and the big pieces moved in!

Graduation Day!

Last night was my graduation from Rose State College. My degree is in Liberal Studies, but I plan on continuing on to get my Masters in Education, and a degree in Biology Education, grades 5-12. I already have a university picked out online, so I can keep plugging away at my education while I wait for baby Letteer to arrive, and to occupy myself during long naptimes.

We have our 18 week appointment next Thursday, and the following Monday is the big anatomy scan- not just the gender of the baby, but also check its little brain and lungs and make sure everything is developing just right.

I've already made up a little notecard for the Dr to checkmark the gender and then immediately seal it up in an envelope to send to my sisters and mom, who will write the gender on the baby shower invitations- we won't find out ourselves until July! :)
